The fruit should be chosen when quite firm and have a distinct bloom on the surface. Culinary varieties are for bottling and jam making. The dessert plums are juicier, sweeter, and often larger in size. Plum varieties are like Peaches, as they are either clingstones or freestones, depending on the ease with which the flesh can be pulled away from the pit. The skin is rather tough, and should be removed before preparation. |
